If you are a lemon lover you are in for a treat and if you grow lemons, chances are your trees are full of lemons ready to pick. Lemon cakes are a delightful way to enjoy the zesty, refreshing flavour of this citrus fruit and I have rounded up my top five lemon cake recipes. From the irresistibly addictive Lemon Crunch Cake to the heavenly Lemon Chiffon Cake or whether you prefer a simple and quick Lemon Cloud Cake or a show-stopping Mimosa Cake, there’s something here for everyone. And for those who love a tangy twist, the Lemonade Cake is a must-try.
I’m starting with one of my favourite lemon cakes. This lemon crunch cake is wonderfully moist lemon butter cake layered with lemon syrup, lemon curd, and vanilla whipped cream, then topped with more cream and candied lemon slices. The final touch is a buttery, crunchy almond layer that makes this cake irresistibly addictive!
This lemon mascarpone cake is incredibly simple to make. Just place the ingredients in a food processor, and you’re done! The cake is topped with whipped mascarpone, lemon curd and a sprinkle of coconut.
This Mimosa cake is a stunner and has a light lemon flavour to it. Light sponge cake layers flavoured with lemon and vanilla are sandwiched with Crème Diplomat and topped with more crème. Tiny squares of sponge cake cover the entire cake for a final flourish (and it was designed to resemble wattle blossoms!).
This lemon chiffon cake is heavenly. It’s beautifully tall and needs little adornment when sliced. The cake’s airy texture is never dry and its sherbet-like lemon tang combined with the sweetness of white chocolate truly makes it a must-bake!
I saved another favourite until last. This lemonade cake is perfect for lemon lovers with a strong, tart lemon flavour balanced by soft, billowing whipped cream and a sprinkle of tingly lemon sherbet on top.
