Ingredients:

750g curry-cut chicken
Salt
Juice of 1/3 lime
2 tbsp yogurt
1/3 tsp turmeric
1 tbsp ginger-garlic paste
1 tbsp black pepper powder
2/3 tbsp chili powder
1 tbsp coriander powder
2/3 tbsp roasted curry powder or meat curry powder
3 green chilies, chopped
2 tbsp coconut oil
1/2 stick of Ceylon cinnamon
2/3 tbsp cumin seeds
3 cardamom pods, crushed
1 large sprig of curry leaves
1.5 large red onions, chopped
4 cloves garlic, chopped
3 green chilies, sliced
1 large tomato, diced
2 large potatoes, diced
Splash of water
Coriander leaves


Instructions:

1. Marinate the chicken with the ingredients listed above. Set aside for at least 30 minutes.
2. Heat a pot over medium heat and add the coconut oil. Once the oil is hot, add all the whole spices and curry leaves. Sauté for 10 seconds.
3. Add the onions and continue sautéing for about 3 minutes, until the onions become translucent.
4. Add the garlic and sauté for another 7 minutes.
5. Add the green chilies and tomato. Mix and cook for 5 minutes.
6. Add the marinated chicken and mix well for 3 minutes. Cover with a lid, reduce the heat to medium-low, and cook for 15 minutes.
7. Remove the lid, add the potatoes, cover, and cook for another 25 minutes.
8. Remove the lid, check for oil separation, and ensure the potatoes are cooked through. Serve and garnish with coriander leaves.
