If you’re lucky enough to be in the middle of mango season then I have some easy mango recipes for you. These mango recipes include a delicious cocktail, a recipe using up mango scraps, preserving mango or restaurant quality mango lassi or mango sticky rice! Does let this season pass you by.
Mango lassi is an Indian restaurant classic and I worked so hard on this recipe to get it juuuust right so that it tasted just like a restaurant quality mango lassi (I made around 20 batches!). It has the requisite tang but also the fruitiness from the mango thanks to two important ingredients!
Ok sharing time: mango and passion fruit is one of my favourite combos (along with strawberries and cream) and this mango and passion fruit curd makes the most delicious curd or butter! You also end up with 3 cups of curd so it’s great if you want to make edible gifts.
This recipe does double duty as it uses mangoes but the scraps of the mango that you would normally throw out! Seriously, there is so much flavour on the skin and pit after taking the flesh off. We make this every couple of weeks and I keep the skins and pits in the freezer until I have enough to make a big batch.
We’ve all heard of red sangria but white sangria is just as delightful and super summer friendly too. This white sangria uses plenty of mango nectar or the syrup from the above recipe!
